Elderflowers

The hedgerows around us are currently decorated with the large heads of tiny cream flowers of the elder. The flower heads are full of pollen and make a yummy cordial drink.
Mum has given me this recipe for Elderflower Cordial that she has made for the last few years…

Recipe for Elderflower Cordial

  • 25 Elderflower heads
  • Juice and zest of 2 lemons
  • 1 box of Citric Acid
  • 2.5 pints of boiling water
  • 2 lbs sugar

In a large pan dissolve the sugar, lemon and citric acid in the boiling water. Shake out any bugs and quickly rinse the elderflower heads then add to the pan. Leave for a couple of days, enjoying the wonderful smell in your kitchen and then strain through a muslin into sterilised bottles (keeps best in the fridge).
